We removed all of our lathe and plaster walls, it was messy and very disheartening to see the house covered in inches of dust, but definitely worthwhile now it's finished and all our rooms are square and straight with smooth wallsAlso the rewiring was done while the walls were stripped back so everything is hidden behind the new wallsIt also ironed out any potential damp issues we might have hadIt's ok to cover up the old walls, but i would do a complete job now if you can afford it.
If you are trying to selectively open up walls to remove and replace plumbing, and wiring and planning on a full drywall project after that, then it is definitely best to go for the full removalTake it all offGo for itIt will make the job much easier, much better product and more efficient in the endYou will also be able to get a good look at the structure, get a great insulation job, and then a perfect drywall finishIt's a big task but your house will be ready for another 100 years after that.

Remove the plaster wallsThey will crumble in timeMy first house was 100 years old and had lathe and plaster wallsWe also needed insulation, new wiring and plumbingThe plaster was crumbling in places You don't want that to happen behind your new wiring and drywall.:)
