fabrics like wool, cotton, polyester, acrylic ect.
Those are fibers, not fabrics. Wool, cotton, and linen, for instance, are natural fibers that must be processed into yarns before being woven or knit into fabrics. Synthetic fiberss like polyester and acrylic are synthesized chemically, then turned into yarns, and then into fabrics. It sounds like you need either some basics to start with, like the articles in pedia on each of the fibers you're interested in, or you need a good textbook on textiles. which you can often find at the local library. Good ones include books by Kadolf, Humphries, Collier, Pizzuto, and my favorite, Debbie Ann Gioello's Understanding Fabrics: From Fiber to Finished Cloth.
They are woven like you sometimes see rugs being made. If you ever get a chance to visit a mill like l had it is a very interesting experience. the weaving of the cloth is done in a separate room away from all the other machines. l watched it through the window being done.
