You are better off using Krustez pancake mix because you only add waterThis way you don't have to split an egg.
How can you eat just one pancake? I have learned to make many pancakes and whatever is not eaten, freeze in ziplock bags for a later meal, just pop them in the microwave for a minuteFollow the directions on the box.

I use a container or a box with lid (like a shirt gift box) and line it with aluminum foilAfter lining, I place paper towels over the foilThen I take a piece of cardboard and cut out circles for the cupcakes to fit into (so they don't get crushed inside the box) and close the lidIf your tote bag is big enough, great, if not, carry the box/container in the bottom of shopping bagNo one will realize there are cupcakes inside.
