plasterboard adhesive is easy and quick. Don't batten the brick and fix to that - more work and time and more thickness.
What I would suggest as not the easiest, but the best for returning to brick in the future, drill holes in the concrete(not brick) in rows and screw 2x4 or even 1x2 to it, every 24 inches (if you plan on putting light objects on the wall, I would do it every 12 inches. That way if you ever want to pull the plasterboard down, you can without trashing the brick, you just need to fill the holes in the cement. Fast and dirty way, use liquid nails.
