how do i keep my cheese soft and fresh longer?

i have alot of havarian-like cheese in my fridge is there anything i can do to keep it soft and fresh longer? ive noticed in the past it seems to dry out after a few days which makes it no good.

They are going to stickI wouldn't make pot stickers for this eventThe beauty of a pot sticker is that it is cooked and servedMake won tons instead and make a nice chicken stock and then keep the chicken stock hot in the Crock pot and add the premade but uncooked won tons 15 minutes before you serve themYou can premake the wontons and let them dry a bit on cornstarch and then chill them and wrap them in waxed paper so that they don't stick.
I buy 2lbs of cheese because it's cheaper this wayafter opening, I cut it in 3 pieces and wrap them individually in aluminium foil, tight, make sure there's no room for airI only use one piece at a time to open the wrap daily and cut what I need, the rest stays untouched until I get to use them.
