Answer:

They are right, you need what they call a dielectric union, which is what I ended up buying. You cannot couple galvanized pipe to copper directly for chemical interaction reasons. The galvanized pipe will oxidize the copper over time (or so it was explained to me by a guy at Home Depot).
Use a DI-ELECTRIC UNION COUPLING. This coupling has rubber like gasket inside that is intended to separate the two different metals (galvanized iron and copper) which if connected directly to each other would create a process called electrolysis that results into corrosion. You will tread this into the iron side and you will sweat your copper pipe on the copper side. You might want to set this joint in an accessible area if possible for future service if needed. Good luck!
Use plastic between the two metals. Where you cut the pipe put a threaded connection then use a PVC coupler. If galvanized and copper touch it will corrode.
