wellin more than one way, of course :) here is my recipemay sound a bit strange but orange/lemons and pork goes along great!! ;) Pernil: 1 Large Pernil 12 cloves Garlic crushed 1/2 cup olive oil 1 yellow onion 3 lemons, cut in half 2 T salt 1 T Adobo 2 tsp coriander 1 tsp fennel seed pepper 1 tsp dried mustard seed Tropical fruit 1/4 C flour how to: Pre-Heat oven to 375 degrees Cut small 1/4 inch holes throughout the pernil, making sure to keep fat skin side untouched Grind spices, onion, garlic in blender with oil Stuff Pernil with mixture Coat all sides of Pernil with Mixture Put it in an oven safe container with fat side facing up Cover with aluminum foil Put in oven, check on it every hour and basteAfter the 5th hour (check with a thermometer to make sure it is cooked) Let it sit 15 minutes before serving Take remainder of sauce stuff in bottom put in food processor Mix in your favorite tropical fruit (e.gmango, guava) Add salt to taste Add in a little flour (1/4C) drain and stir by hand Carve and serve with fruit mixture ``
