important you always have liquid in the pan always cook fat side up and baste frequently try a cooking bag use meat thermometer bake till internal temp reached 165 by bone using a oven bag cooks for less time one place I worked would over wrap in plastic film then over wrap in foil it does work but I dont think it will help dryness as i mention use methods above
