I purchased some fresh thyme from the market and didnt use it allThe leftovers i put in a ziploc in the fridgeit smells good still, but appears a bit wiltedi dont want it to go to waste-how long will it stay good in the crisper (it has been there about 2 weeks maybe)should i hang it up to air dry if i want to presevre it longer?
I am a former chef and use alot of fresh Jamaican thyme, and YES you can dry it, just place it on a paper lined baking sheet, put in a 150 d F or 75 d C oven for half an hour, turn off the oven, open the door and let it sit there overnight, next day take it out and on a clean sheet of paper towel, rub the stems to extract the tiny leaves, then seal in a jar or plastic bag for later useHanging is fine or place it on a aluminum foil pie tin and let them sit on top of the frig for a few days (turn them daily), I have do this with peppers and other herbs even bread crusts for making breadcrumbs.
