I have to remove the old tiles and install new ones. Please can someone who does this for a living guide me in the right direction?

Remove the old tile and dry wall or what ever wall board is behind the tile, put up a vapor barrier, reset a cement board product and tile. Tile with a thin set , never a mastic in this type of area.
