okay, so i've been to a lot of hispanic weddings, quinceneras, celebrations, etcwhere tortillas are wrapped in foil, a few in each packet, and i would love to figure it out! how do i warm them to begin with? do i need a sterno? if i do will they get dry? it may sound simple buti wanna get it right!
If you don't want to spend the money on an electric tortilla warmer (Alton Brown advises against uni-tasking appliances), wrap a few tortillas in aluminum foil (about 2-5 per packet, depending on how fast you expect them to be taken)Put them in the oven at 300 degrees for a few minutesNow, once they're warm, keep them tightly sealed in the aluminum foil (it keeps them from drying out), and you can put them in a warmed dutch oven (put in the oven at 300 degrees for about 10-15 minutes), or if you don't have one of those, wrap the aluminum foil packets in a large towel soaked in really hot waterA bath towel works best if you have a lot of tortillasThe dutch oven works best overall, just be careful taking it out of the oven, they get HOTIf the party is really long, you can always put the whole dutch oven back into the oven to rewarm the tortillas.
