Question:

How to make my noodle casserole less dry?

Okay, I know why pasta absorbs the sauce and it can be dry if left in the sauce, but what about making it not so dry in a casserole you cook in the oven? I did casserole last night and it was REALLY dry! Do I need to begin with more sauce?

Answer:

Use a non-stick sprayOil might get quite sticky if it burns onto the pan.
If the dish has a white sauce, add 1/4 cup cream cheese, ricotta cheese or even marscapone to moisten itIf it has a red sauce, add about 1/4 cup of tomato puree or tomato paste to the dishBoth sauces can also be improved by adding a beaten egg to the sauce before you mix it with the noodles It helps to cover the baking dish with aluminum foil, then remove it for the last 10 minutes of bakingThis keeps the dish from drying out too much.
