i need a good fruit cake recipe?
GRANDMA'S WHITE FRUIT CAKE Preheat oven to 275 degrees (slow)Mix together: 1 ccooking oil (such as Wesson) 1 1/2 csugar 4 eggs Beat vigorously with spoon or electric mixer for 2 minutesSift together: 2 csifted Gold Medal flour 1 tspdouble action baking powder 2 tspsalt Stir in oil mixture alternately with 1 cup pineapple juice, apple juice or orange juiceMix in separate bowl: 1 more csifted flour 1 cthinly sliced citron 1/2 cthinly sliced lemon peel 1 ccandied pineapple, cut in pieces 1 1/2 cwhole candied cherries 3 cseedless white raisins (1 lb.) 3 cnuts, in lgpieces Then pour the batter over floured fruitLine with brown paper 2 greased and floured loaf pans, 8 1/2 x 4 1/2 x 2 1/2Pour batter into pansPlace a pan of water on lower oven rackBake cakes 2 1/2 to 3 hours in slow 275 degree ovenAfter baking cakes let cakes stand for 15 minutes before removing from panCool thoroughly on rack without removing paperWhen cool, remove paperSoak cakes with apricot or peach brandy by brushing with a pastry brushStore by wrapping tightly in aluminum foilKeep in dry area until ready to useThis is a 50 year old Gold Medal recipeIt makes a great wedding or Christmas cakeMay be decorated with candied fruit DARK DELUXE FRUIT CAKE: Follow basic recipe above, but use brown sugar (packed in cup) instead of white sugarAdd to dry ingredients: 2 tspcinnamon 2 tspallspice 1 tspcloves In place of fruit and nuts use: 1 csliced citron 1 ccandied pineapple 1 1/2 ccandied cherries 1 craisins 1 cchopped figs 3 ccoarsely chopped nuts Bake as above Yummy!!!!!!!!!
