I just want to learn how to cook this soup.
This is actually one of my favorite soups! Thai-Style Chicken Soup Adapted from Cook’s Illustrated serves 4 1 teaspoon vegetable oil 3 lemon grass stalks, bottom tender 5 inches halved lengthwise and sliced thinly 3 shallots, chopped 8 sprigs of cilantro, chopped coarsely 3 tablespoons fish sauce 4 cups chicken broth 2 (14-ounce) cans coconut milk 1 tablespoon sugar ? pound button mushrooms, sliced 1 pound chciken breast, cut into 2 pieces 3 tablespoons lime juice 2 teaspoons Thai red curry paste Garnish ? cup cilantro leaves 2 serrano chiles, thinly sliced 2 scallion, thinly sliced 1 lime, cut into wedges Heat oil in a large saucepan and add lemon grass, shallots, cilantro, and 1 tablespoon of fish sauceCook over medium heat until softened, 2-5 minutesAdd chicken broth and chciken breastSimmer 15 minutesAdd 1 can of coconut milk; bring to a simmerCover, reduce heat to low, and simmer for 10 minutesPour broth through a fine-mesh sieve and discard solids, save the chciken breastReturn broth and chicken to saucepanAdd remaining can of coconut milk and sugar to broth and bring to a simmerReduce heat to medium, add mushrooms, and cook 2-3 minutesRemove from heatCombine lime juice, curry paste, and remaining 2 tablespoonsf ish sauce in a small bowl; add to soupGarnish individual soup-filled bowls with cilantro, chiles, and scallionsServe soup with lime wedges.
When I cook salmon, I just get some lemon pepper marinade, Some fresh mince ginger, and some fresh minced garlicMarinate the salmon in that with some salt and pepper for about 30 minThen grill it skin side down first, flip once and your done! Make sure it's medium rare to mediumDo not over-cookTry some steamed veggies with a little salt and pepper, and butter for a sideMaybe some rice pilaf or rice-a-roni for another.
I love to put butter, garlic and parsley on top of the salmon steaks and put them in the oven, while I make a tomato vegetable sauce on the side and rice or potatoess, potatoe wedges are really niceAnd maybe a green salad to go with it allMake sure you have some vitamin C to help absorb all the omega 3 healthy stuff in that juicy fishBon Appetite
Marinate a salmon filet in a ziploc bag for about an hour with the following: Tequila Lime Pinch or two of sea salt chopped Mint leaves enough to have the fish soakinggrill skin side down until just done in the center (no more than 20 minutes)Make a sauce: Juice of one lemon 1/4 cup of honey or pure maple syrup heat until blendedGlaze salmon with sauce just before servingserve with asparagus and a rice dishEnjoy.
