Spanish Rice - this is really delicious; 2 tablespoons vegetable oil 1 cup uncooked white rice 1 onion, chopped 1/2 green bell pepper, chopped 2 cups water 1 (10 ounce) can diced tomatoes and green chiles 2 teaspoons chili powder, or to taste 1 teaspoon salt Heat oil in a deep skillet over medium heatSaute rice, onion, and bell pepper until rice is browned and onions are tenderStir in water and tomatoesSeason with chili powder and saltCover, and simmer for 30 minutes, or until rice is cooked and liquid is absorbedserves 4 Spanish Flan - also delicious 1 cup white sugar 3 eggs 1 (14 ounce) can sweetened condensed milk 1 (12 fluid ounce) can evaporated milk 1 tablespoon vanilla extract Preheat oven to 350 degrees F (175 degrees C)In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in colorCarefully pour hot syrup into a 9 inch round glass baking dish, turning the dish to evenly coat the bottom and sidesSet asideIn a large bowl, beat eggsBeat in condensed milk, evaporated milk and vanilla until smoothPour egg mixture into baking dishCover with aluminum foilBake in preheated oven 60 minutesLet cool completelyTo serve, carefully invert on serving plate with edges when completely cool.Serves 8
