Jelly Rolls are pretty inexpensive but nice looking - you could always get the jam from the dollar storeAnd you can change the filling up with whipped cream and fresh fruit when you are feeling rich! The pan on this, I just use a cookie sheet that has the sides on itUse wax paper (or baking parchment paper) OLD FASHIONED JELLY ROLL 3 eggs 1 csugar 3/4 cflour 1 tbaking powder 1/4 tsalt 1/3 cwater 1 tvanilla 3/4 cjam or preserves confectioners sugar Heat oven to 375Line roll pan (10 1/2 X 15 1/2) with aluminum foil or waxed paperIn small bowl, beat eggs about 5 minutes until very thick or lemon coloredPour eggs into a larger mixing bowl, gradually add sugarOn low speed blend in water and vanillaGradually add flour, baking powder, and salt, beat until batter is smoothPour into pan, spreading batter into cornersBake 12 to 15 minutesLoosen cake from edges, invert on towel, sprinkle with confectioners sugarCarefully remove foil, trim off any hard edges if neededWhile hot, roll cake and towel from narrow endCool on wire rackUnroll cake, remove towelBeat jam or preserves to soften, spread over cakeRoll and sprinkle with confectioners sugar Good luck!
