If it is a sophisticated system a fault will show on the main control panel indicating which detector has been tampered with. Less sophisticated systems will show a fire alarm emanating from that head, possible alerting the fire brigade. If you are caught interfering with a fire detector you may, indeed suspect will, be subject to legal action resulting in a fine or imprisonment, as you should be. You are playing with other people's lives.

Your are thinking okay, it definitely is possible for incense to set off the detector and also the sprinkler. I have not heard of sprinklers in an apartment. They are usually just in commercial buildings. If it is indeed a sprinkler system it is probably controlled by the smoke detector. I think you should check with the building owner on this.
