Short answer; Depends on the resin used, but it probably won't be readily biodegradable. Just because it's an organic compound (meaning carbon-based) doesn't mean it will readily degrade. Plastics are also organic. Epoxies are polymers - the resin will react with the hardener to form cross-linkages between the resin molecules, similar to the way PVC is formed using vinyl chloride. Polymers don't break down readily under normal conditions, which is why they're used for so many applications like coatings and paint. They will deteriorate under UV light, but the monomers that they degrade back into aren't generally environmentally friendly.
