im a builder and time = money. i use pecs and copper... mainly use the pecs for long runs because of the higher cost of copper. copper for the corners and fixture connections. pecs flexible tubing resists cracks and doesnt sweat like copper. super fast is the main reason i use it and ive never had a customer complain... ever! so easy to install even a caveman can do it! (the intial tool set up isnt real cheap though) offset... still less expensive than copper and... im not one for burning anything when i install. no fire just sharp cutters and the banding tool!
Always use copper if possible. We had plastic in our house and had everything replaced with copper. It also depends on your building codes in your area.
Just finished our new home a month ago. We went with Copper. It was more expensive so get ready for that - however...it's been time proven to work the best and no it does not put stuff in your water. Plastic however, has not yet proven it's self and over time (like the siding problem) you don't want to tear out your pipes because they now discovered it's harmful to your health. Good Luck.

Copper has proven itself over time- to be the BEST choice for pipes & plumbing fixtures. Plastic ALWAYS cracks- eventually, and the other metals just tend to corrode too quickly... Sure- copper is expensive... -But, like anything ELSE, you GET what you pay for... And Copper will outlive YOUR decision to choose it. :)
