Quite honestly, If I had a home that was vandilized I would go with PVC. People who are stealing copper are just everywhere! Churches getting vandelized for the copper as well. If I had to turn my back on a home that is not well guarded, I'd have to do something to ward off thieves.
PVC is cheaper these days because copper is outrageous. Copper is more forgiving in places that may freeze in winter. PVC is quicker to connect at joints, too. Be sure to insulate all water supply with something appropriate between it and the outside wall.
PEXPEXPEX!!! Read up on it and do your research. Copper is great but so expensive and takes a little knowledge of what you're doing. PEX can easily be done after a bit of research. It can be installed with only a couple of tools and is a lot quicker than most other methods. No one is going to break into a home and rip out $50 dollars of PEX tubing either.
