My best technique now is to fill a mason jar, leaving as little air in it as possible, and put it in the refrigeratedThis makes the juice last for 3 or 4 days at mostI've also added lemon juice to help.I want a way to make it last a month or two.Would putting it in the freezer immediately work?I've heard of a technique where you put the jar in a large pot so that the entire jar is submerged and boil for 5-10 minutes so that the jar creates a better airtight seal(one, where the cap pops when reopened) But wouldn't this heat the juice and cause loss of nutrients? Are there home-canning machines that you can fill stainless steel or aluminum cans with juice? So that it would end up looking like those 32oz Dole pineapple cans?
Paste alfredoMake a rue with a 3-4 Tbsp browned butter and a bit of flour (around 3/4 c), add 1 t mustard (powder or dijon), dash of saltReduce the heat to medium, and slowly add 4-5 cups whole milk, keep stirringOnce sauce starts to bubble, further reduce heat to med-lowAdd about a cup of grated parm cheeseLet this simmer stirring often until it has thickenedServe over fresh pasta, with veggies on the side (read: frozen peas.gotta love em)
Pseudo-stroganoffBrown a pound of ground beefSeason it with a couple of sprinkles each of garlic powder, onion powder, salt, and ground black pepperWhile it's browning, cook and drain about 8 ounces of pasta according to the instructions on the packageUse egg noodles if you have them, or any other pasta that's available Mix 1 packet of brown gravy mix with a can of mushroom soup and 1/2 cup sour cream or plain yoghurt (or 1/3 cup milk.) Once that's mixed, add 1/2 cup water and stir to mix When the meat is browned, stir in the sauceAdd a small can of sliced mushrooms if your mom likes themLet it heat through, stirring oftenAdd a touch more water if it's too thickIf it's too thin, let it simmer a couple more minutes If you have the egg noodles, serve the meat mixture over themIf you're using any other shape of pasta, mix it in with the meat Serve this with a green veggie of your choice and a simple salad.
Make some nice spagetti Chop up veggies (like red/green peppers, onion, garlic, or whatever else you like) and fry it up in a pan with some vegtable oilAdd some spices if you like - pepper or something a little spicey, some garlic/onion powder if you don't have fresh stuff in itKeep cooking until all the veggies are pretty soft Fry up some ground beefWhen it's browned, and your veggies are soft, put everything into a pot with some spagetti sauce (at this point, it doesn't matter which sauce, simple or something like herbs and garlic spagetti, whichever) Get out another pot, and get the noodles going For me, one package of ground beef, the veggies and noodles, it costs less then 20$ and feeds 3 or 4 peopleJust don't BURN the meat or veggiesORRRR Perogies and salad - do up the perogies nice though, boil them in water until they've been floating for about 3 - 5 minutes, throw them in a pan with some butter, or oil, throw on some spices (again, I love garlic and onion powder and some pepper or red pepper melody(which is a bit spicey)) fry them until just a little browned and then toss them on a plate with some garden salad, maybe even add a nice bit of BBQ chicken slathered in bbq sauce.
Freeze the juiceEither freeze in zip top bags that you can lay flat so the do not take up much room or freeze in containers that you leave about 1 to 2 inches of room at the top Canning cooks the juice so you may loose some nutrientsReally the best way to store it is the way Mother Nature intendedWhole and in the skinThen juice when you need/want someI know this may take a bit more time on a daily basis but you will end up with fresher juice Once juiced the fruit should last a few days it may discolor or settle but I don't think that would be anything to be concerned aboutStore with as little air in the container as possible and shake well before pouringYou might want to look into one of the food vacuum sealers some come with jars that would remove as much air as possible for a home unit.
