I have tried to remove these before but I think maybe even if you did get them off you would find the reason for the leak is that the copper under the ring has yielded and distorted - so a new one would not help. Suggest you take the bull by the horns and put some more pipe in.
For copper compression rings,try a propane torch to loosen the corrosion between the pipe and the ring. For plastic or rubber rings, try a vise-grips with a curved jaw. Be careful, though, or you could deform the pipe.
I highly recommend a cigar box banjo and the magazine, Make. The link below is to the issue that has the cigar box banjo plans. The magazine in general has all kinds of cool stuff to, ofcourse, make. Potato Guns, stop motion photography, etc. My six year old and I made a banjo for them. It was a blast to do together and watch them wear my giant safety goggles and use the drill press. I never got the electric pick-up to work, though. I recommend sanding the neck of the banjo well and round the edges. Also file down the points on the nails (Used as frets).
A guitar is best. It's easy to carry around, portable, and you can accompany anyone with it. A xylophone? It costs thousands of dollars to buy, where would you put it, and it is impractical to make. If you had that free time, like many hours a day, for the next few months and take up a lot of resources and money to make it. You can buy a cheap classical guitar for 50 bucks, and everyone can learn some easy chords without too much investment for some instant gratification. Xylophone requires immense stay for what? Plus, if your kids grow bored with it, which do you think you'd have a better time accepting. Plus the guitar is cool.
