My oven dries out every meal!!!!?

My oven dries out everything I bake in it,meat,potatoes or any roast.What can I do to prevent it?? I tried using baking sheet and aluminium foil but the moisture is completely gone from the top of it,when I bake vegan sausages every bit of moisture is evaporated.Please help!!!
