Question:

Need help with a seafood recipe using lime juice?

I remember reading in a magazine how certain types of seafood could pe preapred by soaking in lime juice instead of cooking. This sounds great for summer, but I don't know what it is called or how to do it. Does anyone have any ideas?

Answer:

key lime pie mojitos any white fish is good with lime either just squirted on it or use the lime juice in a sauce (try garlic, lime juice, red chili flakes, and olive oil as a marinade on any fish or shrimp)
Key limes go great in a homemade cocktail sauce for fish. Swordfish, halibut, sole, cod, shrimp, etc are great with lime juice You can also make a limeade from them. Squeeze the juice on cooked corn kernels with a bit of red chili powder Squeeze the juice into melted butter and add to cooked green beans, squash, pea pods, or just skip the butter and squeeze the juice onto steamed or saute'd vegetables. Squeeze the juice into honey and mix with fresh fruits for nice fruit salad. You can make a chimmichurra sauce with the lime juice, parsley, garlic, serrano, salt and cracked pepper in a blender, and that sauce is fantastic when served with fish, chicken, beef, pork.
As the first answer mentioned you can freeze the juice, however instead of freezing the whole lime, I would juice them first and just freeze the juice. As far as what type of fish ? Lime juice goes fairly well with any type of mild white fleshed fish. It can also be used to make a food called Ceveche, where you can use a finely diced white flesh fish, or even tuna, scallops of shrimp mixed with spices and lime juice. As the fish sits in the lime juice marinade, the acid from the lime juice actually cooks the fish without heat, and is delicious. The recipe below is a basic recipe and any type of fish, scallop or shrimp can be used. INGREDIENTS (Nutrition) 1 pound bay scallops 8 limes, juiced 2 tomatoes, diced 5 green onions, minced 2 stalks celery, sliced 1/2 green bell pepper, minced 1/2 cup chopped fresh parsley freshly ground black pepper 1 1/2 tablespoons olive oil 1/8 cup chopped fresh cilantro DIRECTIONS Rinse scallops and place in a medium sized bowl. Pour lime juice over the scallops. The scallops should be completely immersed in the lime juice. Chill the lime juice and scallops all day or overnight until scallops are opaque (you cannot see through them). Empty 1/2 of the lime juice from the bowl. Add tomatoes, green onions, celery, green bell pepper, parsley, black pepper, olive oil, and cilantro to the scallop mixture. Stir gently. Serve this dish in fancy glasses with a slice of lime hanging over the rim for effect.
you may want to consider tossing them in a ziplock bag and freezing them. you can defrost and use the juice later when you're ready.
Im not a good cook so I would mash them up and mix them with sope and make a key lime scented shampoo! Or I would just take them to the Florida Keys and ask a locle to help me out.
