I would think that ceramic would break too easily to be used as a combat knife, ceramic being brittle. All I've seen is skinners and fish fillet knives, and yeah, mostly kitchen paring knives.
Ceramic knives are basically similar to glass. Like the other guys have said, it wouldn't work as a combat knife. You can't even cut hard materials with one without it breaking. I could go into what steels make the best combat knives, but that's another question
