Question:

Planning on trying to make a key-lime flan...but...?

I am planning to make a key-lime flan, but I am affraid that the citrus acid will curdle the cream and ruin the texture. I am planning on using the following for the custard...6 eggs1 12oz condensed milk1 (half can) 7oz Evaporated Milk6 key-limes sqeezedAny suggestions on how to prevent curdling and ruining the texture?

Answer:

i think baking soda, or try proper stable cleaners - the best smell is lemon since it really blockes the smell of a dirty stable!
I've always used Lime. It is much more economical. Don't let dogs walk in it while it is on the stall floor though! It will burn their paws.
I've used both. Baking soda seems to work a little better, but since I sprinkle all my stalls daily, I use lime as it is more economical. Both do a good job though. Good Luck! :)
Both lime and baking soda are good choices. Borax is also good (20 Mule Team). Put any of them UNDER the mats, away from contact with your horse. Lime is very drying to skin. Baking soda will elevate heart rate. Borax is toxic when ingested.
i always put a lime base in my stalls to help prevent the bad smell from starting and it does pretty well but when there is a bad odor, i'll sprinkle the spot with baking soda. The lime dust base IS a big help because there is no pee to smell bad yet and the dust acts kinda like a forcefield against bad smells. Good Luck!!!
