I need to repair several plasterboard walls that have holes with plugs left in them. What is the quickest / easyiest way to do this

Very gently tap the plugs deeper into the sheetrock. A phillips screwdriver should so. Just enough that you can fill with spackling paste. You can lightly texture those spots after it's dry.
What do you mean, plugs? Do you mean the screw anchors ? If so you need to try and get these out or at least take a knife if they are plastic and cut them off.
