I wouldn't skip dredging in flour which i think really helps to achieve a nice crust and also hold on to more of the sauceAll you do is dip your wings in a egg wash (two eggs whisked with 1/2 a cup of milk) and then toss in a bowl of flour (you can add cayenne pepper to the flour to add some spice)cover the bowl with aluminum foil or cling wrap and shake to coat with the flourdeep Fry in 350 degree cooking oil (canola or peanut etc) until doneYou can also bake the wings instead (350 for an hour and 10 minutes) but I find it makes them MUCH more dry and the crust just isnt the sameIf you bake, bake them already dipped in the below sauceNow the sauce, here is where you're going to decide your level of heat! Personally I like hot wings HOT, so my sauce has NO butter, the butter is mainly used to cut the heat level of sauces so if you like the heat level of the sauce you're using (i use franks red hot as my base) leave it be, if it's too spicy melt butter into it until you find the heat level acceptableIf you're like me and the heat level of the red hot sauce isn't hot enough (or if you added butter to mellow the flavor of your base hot sauce) then it's time to add cayenne pepper, again add this to your sauce mix little by little until you get the right heat level you like, I go over a tablespoon per batch but again, i like them HOTI also add a few grinds from a pepper mill to my sauce as I think it's brings a nice flavor to compliment the heatDon't be afraid to keep dipping a spoon into the sauce and tasting it, once your sauce is where you want it, combine it with the wings in a bowl and shake to coat them with the sauceremove and serve, easy peasy
