Lime in tortillas is actually a mineral that the maiz is cooked in so that the tough husk that surrounds it may soften. It is then rinsed off, but the commercial tortilla makers must list it as one of their ingredients because the maiz was treated with it and some traces may remain.
Minus, if your doing home made tortillas, just use normal lime juice as some do, they add some zest of lime also.
It is the chemical calcium hydroxide, not the fruit. It is part of the nixtamalization process of preparing the corn.
CMC is not so knowledgeable about food. The Lime is in fact slaked Lime. The mineral. not Lime the fruit. I have never heard of anybody making tortilla with lime juice. Never. And I grew up in So.Cal. I have a bag of Masa in my kitchen now. That is Mexican Corn flour with Lime. Just add a little Lard and enough water to make a stiff dough. Edit: the Lme is important as it makes the Niacin in the Corn avavilable. In places that have adopted Corn as a staple food but not the use of Lime, Niacin defeciency became a problem.
