Pex then cpvc then copper last. Pex is the easiest to work with and takes less connections. Less connections means less room for errors. cpvc is also easy to work with takes more connections so make sure you glue them solid. Copper was great in its day but I feel it has done its time, time to move on to better stuff.

First what is code in your area? Some areas do not allow PEX or cpvc. Why is because they have not been enlightened (in my opinion). Personally I like PEX better than anything for replacing piping. It is flexible and fish-able. You do not always have to tear out walls like you often have to do for copper and for cpvc. I have used it in my new house that I built and have used it in several other situations. Sometimes a combination of copper and PEX is what works best. It depends on the situation. Not all PEX is rated for potable water so make sure the PEX you buy is, if you decide to go that route.
