Question:

Roasting a chicken, pan/foil issue?

I'm going to roast a whole chicken and my pan is not deep enough, if I butterfly my chicken and cover it with aluminum foil, is it ok if the foil touches the chicken? Or does there need to be space between the chicken and the foil?

Answer:

If you are covering your chicken with foil, you are more likely going to be steaming the bird, rather than roastingYou do not need foil, a cover, nor a deep pan to roast a chickenAll you need is a shallow roasting pan to catch the pan drippingsThe only time I would use foil when roasting is to loosely lay a sheet on top of the bird in the latter stages of cooking to prevent over-browning, and/or to snuggle the bird after it has been fully roasted to let it sit and rest a few minutes before service.
