Okay here is what we do in the restaurant where I am the chef 1) Render out some bacon, remove the bacon drain, leaving the bacon fat in the pan.(save the bacon) 2) Take the potato, rinse, dry3) Coat the outside of the potato with bacon fat 4) Season generously with Kosher salt (the outside of the potato) 5) Double wrap with heavy duty aluminum foil 6) Place into a preheated 375F oven for 45 min to an hour or until the potato is soft to the touch 7) Remove from oven and allow the potato to rest 8) Cut open, sprinkle in some cheddar cheese, the bacon, butter, sour cream and chives 9) Enjoy, repeat Hope that helps
