well, copper doesn't react with the water because of it;s lower in the reactivity series than hydrogen. But copper is running out very quickly and the price/demand is going up. However, PEX is made from polythene, which is more abundant. I hope this is what you wanted because I am only answering this with my background knowledge of chemistry. P.S.
