Some of turkey's bad rap is because of the way people prepare itMy sister in laws put the dern bird on at like 5am when dinner isn't until 3pm and cook the devil out of itTurkeys flavor and texture suffer greatly when it's overcookedAn unstuffed turkey takes about 20 minutes per pound give or take a little time depending on your ovenThe bland flavor can be helped a lot with proper seasoning and or brining the turkeyI brine or soak my turkey at least overnight in a large pot (in the fridge, please) of water with about 1/2 c of brown sugar, a couple fresh lemons cut and squeezed, a generous dose of sea salt or kosher salt, a good dose of fresh ground black pepper, 2-3 bay leaves and a clove or two of garlic that has been crushedDrain the bird well before placing in your roasting panI also add onion, celery to the cavity of the bird along with salt and pepperYou can also put dried herbs and other seasonings on the skin of the birdAnd some people baste their turkeys with everything from wine to butter to stock to cider or fruit juicesAnd invest in a meat thermometer; that's the only way you know when the turkey is doneThose pop up things are not reliableAnd always allow the turkey to rest on the counter for a good 20 to 30 minutes, covered with aluminum foil before carvingThis allows the juices to redistribute themselves throughout the bird.
