the cooking instuctions on a picnic pork ham says remove the casing.?

what does that mean? this is the first time i'm trying to cook a pork picnic ham.the instructions say remove the casing before cooking.is that just the plastic that protects the meat?or is it the netting that came with it?or is it the thick skin itself of the meat?also it says to put aluminum foil on the ham when cookingdoes that mean a tight wrap or a loose wrap.thanks.

It's the thick skinThe foil is dependent on how long you're cooking it forCheck this out: 3 T brown sugar 3 T paprika 1 1/2 T garlic powder 1 1/2 T coarse ground black pepper 1 1/2 t salt 1/2 cup dijon mustard 8-9 lb pork shoulder or butt roast (boston butt) or fresh picnic shoulder with rind removed 1/2-1 cup BBQ sauce of your favorite BBQ sauce depending on taste 18 large sandwich buns additional BBQ for the side if wanted Adjust oven rack to lowest position heat to 250 in a small bowl combine all the dry ingredients line a shallow pan with foil pat pork roast dry place on rack and set over pan sprinkle top and sides with additional salt brush half of the mustard then sprinkle half of the dry rub turn over and repeat put in oven and roast until thermometer registers 170 about 9-11 hours when pork reaches 165 you can increase temp if you like remove the pork from the oven and let sit about an hourlong enough to handlemeanwhile, scrape pan drippings into a sauce pan and add 1 cup water and bring to a simmerCut pork into 1 - 2 inch chunks and shred with fingers add pork liquid and BBQ sauce to the meat cover and refrigerate up to 3 days, freeze up to 3 months T Tablespoon t teaspoon I have never lined the pan with foil and have always bought a picnic shoulder and cut the rind offCutting the rind off is a pain unless you have a sharp knifeBe careful You are going to paint the pork with the mustard and then sprinkle the dry rub onYou will have lots of dry rub, you may have to pat it onWhen the pork is done, it will be crusty and will mix flavorfully in with the pork when you shred itDepending on what kind of crock pot you have, this is fine at a party when finished.
