I would use the cast iron pan just from my own experienceYou can re-season or cure the cast iron frying pan by rubbing Crisco or lard lightly and bake it in the oven on a sheet try or cookie sheet at 350 degrees for about 10-15 minutesMake sure to place tin foil on the cookie sheet before baking the frying panI'd like to know what kind of sauce your planning on using though.
