This is my favorite vegan recipeWhile I'm not typically into vegan cooking, this recipe is extremely healthy, high in fiber, and has complete protein as well because it uses beans in combination with brown riceIt's also very yummy and I can eat it in very large quantities! 3 1/2 cups brown rice, uncooked 1 lb of dry, black beans 1/4 cup olive oil 1 large onion, medium diced 2 garlic gloves, minced Cumin Kosher salt Black pepper Crushed red pepper Tony Chacheres Creole Seasoning Cilantro Soak the beans overnightDrain and cook in boiling water until softSave some of the juice from cooking the beans along with themThis will keep the dish moistCook the rice according to package instructionsIn a large pot, cook the onion in the olive oil until barely caramelizedAdd the garlic and cumin and cook for another minuteAdd the rest of the seasonings and beans and riceAll seasonings are to taste, but really heavy on the cumin The Tony's seasoning is optional and not even in the original recipe, but I like what it adds to itI'll serve a big plate of this with a vegetable like brussels sproutsMy fiance and I both love it:)
Vanilla extract is only used sparsly anywaysI have made things without it and never noticed! No-bake cookies: Mix: 3/4 cup of milk (more later if necessary) 1/2 stick butter or less if desirable (no biggie) 1/2 cup of coco powder 3 cups of sugar Stir up and boil for 3 minutes remove from heat Add 3 cups of oatmeal 1/2 cup of peanut butter (more or less if desirable) (a teaspoon of vanilla extract) (unnecessary!!) Stir up all together now but hurry! When the stuff cools, it solidifies! Slap the gunk down on wax paper or aluminum foil in desirable cookie sizesDepending on your timing, they will cool quickly if overcooked, or not at all if undercookedThis cookies are really an art form!
