What causes graphite-paper to be used in galvanic cell(Batter)?

This is a video that shows Graphite paper, Aluminum foilwith NaOH and KMn04 as the electrolyte.Can someone explain to me how and why the Graphite paper is used to create the electricity, and please give me suggestions on what materials I can use to substitute it.(Meaning instead of graphite paper, what else can I use)

Answer:

Graphite is carbon in a form that conducts electricity but which is not chemically attacked in the battery.So it would be an electrode,probably the positive one.I don't think it is practicable to replace it with something else,graphite is supreme in this role.
