I know that they usually go well with eggs, but I want to make something different and hopefully have them for supperWhat other then egg can you recommend I make with the hash browns?

I have a delicious casserole using frozen hash brownsMy sister originally found this recipe and we adjusted itTake a 32 oz bag of hash brownsFinely chop 1/2 of an onion and mix in with the hash brownsIn a bowl stir together 1 cup sour cream and a can of cream of celery soupStir the soup mixture into the hashbrown and onion mixture along with a cup of shredded cheddar ( we have used monterey jack as well) and some diced hamSprinkle with cheese and cover with aluminum foil and bake at 350 degrees for about 45 minutesThe last 15 minutes, remove the foil so the cheese can melt This fills up a 13 x 9 inch pan, so it makes a lotI also make breakfast for dinner some times by browning some hash browns with diced onion, bell pepper and stirring in some cooked sausage or diced hamWhen the potatoes are done, I sprinkle with cheese and pour 1/2 dozen scrambled eggs over the potatoes and then put it in a 350 degree oven for about 15 minutes, until the egg is set I usually fix biscuits or pancakes to go with this, but my mother, who eats healthier than I do, usually has a salad with both of these hash brown meals.
