I would say to just go w/ a simple room divider at first. Then, in the future, if it's something you'd like to add to your home permanently, I'd recommend contacting a contractor who specializes in that type of work.
plasterboard or sheetrock, it depends if you need it to be permanent or just to create 2 spaces with a little privacy. You may not want to go all the way to the ceiling.
plasterboard because it is stronger and so the sound wont be as loud through the rooms so they will have more privacy and wont get on each others nerves
you may want to get a curtain rod like they have in hospitals were it slides the curtain and is bolted to the ceiling a nice long curtain in a neutral color
