CPVC is just another form of pvc except has a high impact strength working temp up to 200 F. The C means it has been chlorinated. PEX was made for Hydronic heating Systems. As for size as I live in Aussie I can only give you Metric: 16mm to 63mm. This can also be used instead of PVC/CPVC, it is a more viable alternative. Retired Plumber.
Id say you just got very lucky your weren't directly struck. But the reason you probaly werent struck is because you were walking and the lightning bolt connected with the ground before you were close to the charge.

Have never heard of PVC making the water taste bad. PVC is used extensively for potable water applications. CPVC is mainly used for hot water applications. PEX can also be used for both cold and hot water applications and is flexible so you don't need additional fittings. The fittings you do need require a special crimping tool to correctly join the fitting to the pipe. Don't know why someone at Home Depot would tell you incorrect information about PVC, other than they hire people off the street, so they could get someone who doesn't really know as much about a subject as he may have claimed.
