I make the best ribs and never ever par boil ribs Season them to your likingSoak 2 cups wood chips in water for about an hourPlace them over the grayed charcoalsImmediately put the ribs on the rack, cover and let smoke for 2 hrsThe meat will absorb the smoke immediatelyCheck them about once every 20 minutesMy ribs are always juicy and nicely smokedWho wants watered down ribsBesides the boil takes away some of the flavorPractice, practice and eventually you will make the perfect ribsAfter they are done, wrap them in loosely closed aluminum foilYou can also baste them in a good bbq sauce before removing them from the fireIf you don't want to finish cooking them on the grill, you can remove them after they have absorbed the smoke, place in aluminum foil and finish in the ovenDuring the last 15 minutes, open the foil and let them dry a little bit so they aren't full of moisture.
