An Additive is anything that is added to food. The popular preservatives are Pottasium Sorbate, Sodium Metabisulphite, S02 etc Normally the level of preservatives is around 150-300 ppm. The preservative preserves the food by retarding growth of Yeast, Moulds, Bacteria etc So all preservatives are additives, but all additives are not preservatives !! Additives can be Natural or Artificial. For example Natural Colors are graded as additives. Sugar and Salt are not additives as mentioned in one of the posts. They are food.
Additives are ingredients or chemicals added to enhance flavor or to add special benefit (such as adding vitamins and minerals to cereal). Preservatives are intended to preserve the food for a longer amount of time so it lasts longer.
