The only reason lemons or limes are use in guacamole is to keep the avocados from turning brown and looking ugly but you can make it without but do it just before serving it so it will be green and not black. I make salsas without lemon/limes and it's just chili and tomatoes and onion and if you like you could add some of the el pato in the yellow can to it for more liquid and it's good. The lemons and limes are to not only add some zest but to keep certain fruits and veggies from turning color because when air hits the meat of the fruits and some veggies it will start to turn brown or black in color.
You can use the juice of an orange (: they work fine!
