What type of pan should I use to make a pork loin roast?

I want to make a small pork loin roastMaybe 2 or 3 lbsEnough to feed one person for a week or soI plan to rub it with onion and garlic powder, then cook it for half an hour at a high temperature and several hours more at a very low temperatureI have a 9 by 13 nonstick cake panWill that work? Or should I buy a disposable roasting pan? Also, should I cover it with aluminum foil at any point during the cooking process? I don't want it to come out dryI've never made roast pork before, only roast beefAny advice would be appreciated!

Well I'm in Phoenix and I've found that the R40 works really well in both summer and winterWe still have R33 in the walls and that's just fineWe share the same balmy, cool climate in the summerLOL
I live in the Dallas area and recently had an energy audit done by my power companyOne of their recommendations was R40 attic insulation.
I use a 9 x 13 Pyrex baking dishI am not sure what you mean by a non-stick cake panI would like to question your cooking temperatureMay I suggest you get a package of large oven bags and follow the cooking directions for pork roast found on the pamphlet inside the packageIf you wish to seal in the juices, I recommend searing on the stove top instead of baking at a high temperatureTo use the stove top you will want to dredge the roast in ? cup of flour, a ? teaspoon salt, and a ? teaspoon pepper in a paper bag before searing.
