I'm re-doing my bathroom and am wondering if I should lay the engineered wood flooring down under the new shower/bathtub, or should I install that first and lay the flooring around it?
After would be the better option. But you could really do it before or after.

normally ,bath tub should be install in sub floor .In this order first install the bath tub and then flooring ,now flooring what ever it want to be you must seal the contact points of the flooring with body of the bath tub by silicon clear crystal .
after but a wood flooring near water is probably not a good choice, a ceramic tile or other water proof flooring would be a wiser choice for a bathroom
the flooring you are talking about should not be installed where there might be chance of getting wet as it will swell up, unless you get the best flooring there is, don't get the cheep stuff to save money...u want the thickest finish there is on top of that flooring...( read the finish thickness on the box ) if the room is already gutted meaning nothing in the room them I would lay my floor first...don't try to butt the flooring up to the tub because your going to end up with a gap then your going to need trim and that does not look good... in a bathroom I would use tile or vinyl ...again lay the flooring first
