Not compass south, but solar south. It's easy to find. Google Find Solar south and you can get directions. Even better are trackers, that will let your panels track the sun all day.
depends on the exposure.[trees other buildings, etc.] If you don't have trackers to keep the panels facing the sun , just plain old due south ,I've heard, is best for best average exposure.
You orient them to the place where you can get the maximum exposure to the sun. You can get adequate exposure through many degrees. If you really are looking to instal panels then consider an Aussie invention which has a tracking device! Rotating to follow the transit of the sun!
The following links is a sun angle calculator which I find very helpful during my days of doing project about solar panel. The calculator will give you the accurate location of the sun. Solar panel work best when it is directly facing the sun. All you have to do is key in your location details and it will provide you with two most important details: azimuth angle and altitude angle. Azimuth angle is the East angle where the Sun is relative to the South while altitude angle is the tilt angle of the solar panel throughout the day. By using these two angles, you will maximize your exposure of solar panels. However, if you are experiencing rainy or cloudy days, horizontally mounted solar panels is the most efficient.
On a sunny day about noon, hold up a stick move it until there is no shadow...that is the perfect direction to point the panel...but yes...south is the simple answer
