The lemon in apple pie helps keep the colour of the apples from turning brown. You would use lemon juice... The zest is just trndy and no longer fundamental. Lime will taste like lime.
sure, lime would be best but lemon works just fine! it is what I use because I use bottled key lime juice! therefore no limes to zest!
