Here is what I have recently discovered: If you decide to use PEX I would go up one nominal size from what you would use with either copper or CPVC. Copper and CPVC both use external fittings whereas PEX uses internal fittings which greatly restrict its water carrying capacity. 3/4 PEX using brass crimp style fittings will not carry any more water than 1/2 copper. The brass fittings used with 1/2 PEX are barely big enough to pass a #2 pencil.
It depends on the properties of you water and what kind of situation you are running the pipes under. If you have acidic water, you should probably run cpvc. The acid in the water can corrode the copper away in a short time. Copper is expensive to buy and also you run the risk of starting fires especially in older homes when remodeling. Cpvc doesn't need any special tools to install. The other option would be questpex. If is very flexible and doesn't require alot of fittings. It does need a special tool to put the crimp rings on. It does come in long lengths which means that you could run a solid piece to the 2nd floor with no fittings behind the drywall. For most homeowners cpvc is the way to go. All material is usually available at local hardware stores. Just give the glue at least 1 hour to dry and primer the pipe and fittings before gluing them.
Depends on the who you want to use it?? PVC or cpvc is great for water mains 24 below ground check your local code for burial depth. I would not have it in my house. Copper is the most dependable Type L Copper and above Type M is to thin. Note It will cost you a arm and two legs to plumb a house and take a chance of having the work you've done stolen from your house. Its worth more the gold to a crack head. Look up PEX--- It's to hard to explain but It's cheap, strong and comes with a guaranty.
