yes you can, something like a stable blanket would work fine, just make sure its a size smaller or the same size as the one on the top so it stays underneath and wont get wet, and make sure to loosen the straps of the one that goes over a little bit so that its not too tight

Sure you can, as long as you make sure it doesn't slide and try to find one that will wick away moisture so she doesn't get damp.
Im sure one blanket will be fine, I have a TB mare and she only wears one blanket in the winterI believe hers is a mid weight also.
